DevilsFoodThis is my secret weapon when I need to make a cake from scratch, which isn’t that often to be honest!  But typically for the boys’ birthdays I use this because it can be make dairy free and for the past 8 birthdays there has always been a friend that has a dairy allergy.  And this year, Zain is now needing to be dairy free.  I use this a lot in conjunction with my Aunt Patti’s Fluffy White frosting, which is also dairy free.  So here goes!  This can be made as cupcakes or as a sheet or round cakes.  I used this recipe to make Zain’s 4th birthday cake which was a robot.  It was a cooking theme, but he really wanted a robot.  Of course he did.


Devil’s Food Cake


  • 2 1/4 cups Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 1/2 teaspoon Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Butter or Butter Alternative
  • 1 3/4 cup Sugar
  • 1 teaspoon Vanilla
  • 3 Eggs
  • 1 1/3 cup Cold Water


Step 1
For cupcakes: Line muffin tin with liners--it should make 24 cupcakes. For cake: prepare your pans by greasing and flouring them.
Step 2
Mix together the flour, cocoa, soda and salt and then set aside.
Step 3
In a mixing bowl, beat butter for 30 seconds. Then add sugar and vanilla and beat until combined.
Step 4
Add eggs one at a time; beat will after each addition.
Step 5
Add flour mixture and water alternately to the sugar/butter mixture, beating on low speed after each addition just to combine.
Step 6
Pour batter into prepared pans or tins.
Step 7
Bake at 350 degrees for 20-25 minutes for cupcakes and 25-30 minutes for 9" round cake pans. Ovens vary.
