I’ve noted before that my little guy is challenging to feed. He’s actually really easy to feed if you only want to make PBJs or grilled cheeses. But I’ve finally found the solution to getting him to try almost anything–other than giving him a sticker–he does most anything for a sticker at least once. It’s to bread it–make it a nugget. Last week he ate almost an entire piece of eggplant because it was breaded–that’s a win in my book! So I made up these fish nuggets and they were a big hit. I made mine gluten free, but they would be just as easy and tasty with all purpose flour and “regular” breadcrumbs.
Believe me…this is the face of a boy that’s happy. I know, it’s hard to tell!
Gluten Free Fish Nuggets
- 12-16oz White Fish (I used cod)
- 1/2 cup Flour of choice (I used a gluten free blend)
- 1 1/4 cup Bread Crumbs (A combination of regular and Panko style)
- 2 Eggs (beaten)
- Salt, Pepper, Garlic Salt, Garlic Powder (Or other favorites like chili pepper, paprika, chipotle, etc.)
|Preheat the oven to 400 degrees and spray a large cookie sheet.|
|Cut the fish into cubes or small chunks.|
|Put the flour into a shallow bowl and mix with garlic powder, garlic salt, salt and pepper.|
|Beat the eggs in a shallow bowl.|
|Combine the breadcrumbs in a shallow bowl.|
|Dredge the fish into the flour, then the egg and then the breadcrumbs and then place on the cookie sheet.|
|Once all of them have been breaded, bake at 400 degrees for 20 minutes.|
|Serve with homemade tartar sauce--1/4 cup mayonnaise, 1 tablespoon of ketchup and 1 tablespoon of sweet pickle relish.|
