Mom’s Quick Coffee Cake

coffeecakeThis is by far the easiest coffee cake recipes you will ever run into.  It can be whipped up in less time than it takes to preheat the oven and it only takes 20-25 minutes to bake.  Can you say, instant gratification?  My boys love it!  I make mine gluten free by using a gluten free one-to-one baking flour blend and dairy free with almond milk and Earth’s Balance ‘butter’.  Since it has 3 teaspoons of baking powder it leavens very well in spite of being gluten free.  Enjoy!

Mom’s Quick Coffee Cake


  • 1 cup Flour of choice (if you use gluten free, add an extra heaping tablespoon)
  • 1/3 cup Sugar
  • 3 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 Egg
  • 1/2 cup Milk of Choice
  • 1/4 cup Vegetable Oil
  • Topping
  • 1/2 cup Brown Sugar
  • 2 teaspoons Cinnamon
  • 2 tablespoons Flour of choice
  • 2 tablespoons Butter or Butter Alternative (melted)


Step 1
Preheat the oven to 350 degrees and spray/grease an 8x8 or 9x9 baking pan. Stir together the dry ingredients and set aside.
Step 2
In another bowl, combine the egg, milk and vegetable oil and then add them to the dry ingredients.
Step 3
Mix until smooth.
Step 4
Combine the topping ingredients and mix with a fork until crumbly.
Step 5
Spread half of the batter into the bottom of the baking pan and then top with 1/2 of the topping. Then repeat.
Step 6
This easily doubles to make a 9x13 pan for a larger crowd.
Step 7
Bake at 350 degrees for 20-25 minutes until golden brown and set in the middle.
